Catering Options: Ungarnished Kitchen and Catering Offers Custom Catering that is dictated by the individual event locality, customer needs, event location constraints etc… The options listed below are subject to change at the discretion of the catered and caterer alike to insure the Most Kick Ass Experience possible. And if you don’t see something you like, we have plenty of other tricks up our sleeves.

Buffet Style Options:

 Super Fancy Taco Bar:  House Fried Corn Tortilla Chips, Flour and Corn Tortillas, Southwest Spiced Slow Cooked & Shredded Beef Chuck Roll, Southwest Spiced & Grilled Chicken Thighs,  Southwest Spiced Grilled Portobello Mushroom (vegan option), House Pico de Gallo, House Roasted Garlic & Chipotle Garden Salsa, Sweet Corn & Roasted Pepper Relish, Signature Maple & Roasted Garlic Guacamole, Queso Fresco, Queso Blanco, Cotija Cheese and Good Old Sour Cream.

(Definitely Healthier than Average) BBQ Spread:  All Natural Smoked Braised & Shredded Pork Shoulder, All Natural Grilled Slow Cooked & Shredded Chicken Thighs, Homemade Molasses and Whisky BBQ Sauce, “Baked” Potato Salad, Spicy Honey Citrus and Apple Cider Coleslaw (vegetarian), Seasonal Fruit Tray and ‘Montana Wheat Company’ Brioche Buns.

  • “Loaded” Baked Potato Soup: Bacon, Smoked Gouda Cheese, Leeks, Carrots, Celery, Chicken Stock, Organic Potatoes and a Splash of Heavy Cream. Organic Mixed Greens Salad with Herb Roasted Chicken Breast, Organic Tomato, Organic English Cucumber, ‘Eye Lash’ Cut Red Onion, Maple & Roasted Garlic Toasted Seeds and Homemade Ranch (without the Hidden Valley Packet).

A Big Pot of Chili and Toppings: All Natural Smoked Slow Cooked & Shredded Pork Shoulder (other protein or vegan options available), Roasted Tomatillo, Roasted Poblano, Roasted Jalapeno, Homemade Broth, Black Beans, Garlic, Hominy and Pureed Avocado.  Toppings Include ‘The Best’ Pico de Gallo, Queso Fresco, Corn Tortilla Chips, Lime Wedges, Sour Crema and Sliced Jalapeno

Carved Prime Rib Dinner: 10oz Slow Cooked Black Angus Prime Rib, A Mash of Potatoes (Russet, White Sweet Potato, Red Potato) with Buttermilk, Truffle Butter & Greek Yogurt, ‘Blackened’ Spiced Grilled Vegetables, Classic Horseradish Sauce and Real Deal Au Jus.

Tropical Chicken Thigh Dinner:  Caribbean Spiced Grilled & Slow Cooked Chick Thighs, ‘Dirty’ Rice, Sauteed Honey & Chili Spiced Carrots; served with Seasonal Fruit Salsa. 

Adventurous Meat and Potatoes:  Seared & Slow Cooked Beef Chuck Roll (It’s Like Pot Roast), Herb Roasted Red Potatoes, Lemon Pepper Broccoli topped with Chimichurri (It’s Like South American Herb Based Steak Sauce).

Mediterraneanish Chicken Pasta: A White Wine Citrus & Herb Sauce, Penne Pasta, Sauteed Chicken Thighs, Sundried Tomatoes, Portobello Mushrooms, Bell Peppers, Onion, Spinach and Garlic topped with Fancy Italian Cheese.  Served with ‘Izzio’ Garlic Bread.

Grande Buffalo Chicken Drumsticks & Thighs: Beer Braised Chicken Drumsticks and Bone-in Thighs over Root Vegetables (Carrot, Celery, Onion), Roasted Garlic Baked Potato Wedges and Honey Buffalo Sauce.  Comes with Organic Greens Salad with Grape Tomatoes, English Cucumber, ‘Eye Lash’ Cut Red Onion and Choice of Homemade Ranch (without the Hidden Valley) Ranch or Blue Cheese Dressing.

‘Better Than My Dads’ Ribs: Pork Ribs Seasoned with Super-Secret Rub Slightly Smoked and Slow Cooked, Mashed Jersey & White Sweet Potato and Apple & Bacon Sauteed Brussel Sprouts all served with Molasses & Whiskey BBQ Sauce.  *My Dad Makes Really Good Ribs but Mine are Better.

  • Herb Pesto, Olive Oil and Fresh Bread: Simple and Delicious Herb Pesto (Fresh Basil, Rosemary, Oregano and Thyme), Fennel, Toasted Pumpkin Seeds, Garlic and Lemon Juice with Extra Virgin Olive Oil and Fresh Baked Multigrain Bread.
  • ‘Dirty’ Black Bean Dip: Scratch Made Black Beans with Roasted Garlic, Roasted Poblano and Natural Bacon pureed with Greek Yogurt, Cilantro, Citrus and some Dirty Little Spices.
  • Ceviche: Assorted Available Seafood, Onion, Garlic, Poblano, Jalapeno, Tomato, Avocado, Citrus and Spices.

Bite Size Things:

  • Baked Brie, Apple and Granola on Toasted Baguette.
  • Loaded Baked Potato Bites: Herb Roasted Red Potatoes Stuffed with Cheddar Cheese, Sour Cream, Horseradish and Chive
  • Strata Bites: It’s Like a Savory Bread Pudding. Bread Based ‘Casserole’ with Milk, Eggs and Desired Flavors. My Go-To Flavors are Ground Sausage, Roasted Green Chili and Cheddar Cheese.  Maybe You’re Thinking Turkey, Bacon and Avocado… You Can’t Go Wrong.
  • Sweet Potato Bacon Jam on Crostini: All-Natural Bacon, Onions, Vinegar, Mashed Sweet Potato, Herbs and Spices on a Roasted Garlic Sourdough Crostini
  • ‘Stuffed’ Sweet and Spicy Peppers: Mini Sweet Peppers filled with Black Berry, Maple & Roasted Jalapeno Mascarpone Cheese.
  • Shrimp Cocktail with Homemade Cocktail Sauce.
  • Chicken Parmesan Stuffed Mushrooms: Button Mushrooms, Shredded Chicken Breast, Sundried Tomato, Garlic, Onion, Lemon, Fresh Basil, White Wine, Breadcrumbs and Fancy Italian Cheeses.
  • Baked Salmon Balls: Smoked Salmon Dip Rolled into 1oz Balls, Coated in Egg Wash Breaded and Baked.
  • Peanut Butter, Oat and Chocolate Bites: Somewhere Between Breakfast and Dessert Lives Gluten Free Rolled Oats, Natural Chunky Peanut Butter, Chia Seeds, Honey and Milk Bites Topped with Dark Chocolate and Sea Salt.
  • Meatballs: 50/50 of All-Natural Ground Pork & Lean Ground Beef, Bacon, Onion, Garlic, Peppers, Egg, Breadcrumbs and Spices. Prepared Swedish or Italian Style

More Than a Bite but Not a Meal:

  • Curried Chicken Salad Lettuce Wraps: Curried Chicken Breast, Greek Yogurt, Siracha, Lemon, Onion, Celery, Honey on Bib Lettuce; Topped with Toasted Shredded Coconut
  • Cuban Sliders: Caribbean Spiced Slow Cooked Pork Shoulder, Pickles, Swiss Cheese, Honey Mustard, Black Forest Ham and ‘Eye Lash’ Cut Red Onion on a Buttered & Pressed Hoagie; Cut into Cute Triangles.
  • Grande Buffalo Chicken Drumsticks: A Little Smoke and Then Slow Cooked Chicken Drumsticks, tossed in Honey and Buffalo Sauce. Served with Ranch or Blue Cheese.
  • Chicken Skewers with Peanut Sauce: Chicken Thigh Chunks marinated in Tamari, Lime, Ginger and Turmeric; Grilled and Served with Thai Style Peanut Sauce.
  • Ribs: Pork Ribs Seasoned with Super-Secret Rub, Slightly Smoked and Slow Cooked; Tossed in Molasses and Whiskey BBQ Sauce.
  • Fish Cakes: Basically, Crab Cakes but Less Expensive; Cooked White Fish, Egg, Breadcrumbs, Fresh Dill, Basil, Lemon, Garlic, Aioli, and Dijon Mustard. Portioned to 2oz Cakes and Griddled; Served with Cajun Remoulade (Fancy Tartar Sauce)
  • Turkey and Bacon Jam Sliders: Oven Roasted Turkey, Bacon & Apple Jam and Arugula on Buttered and Pressed Focaccia; Cut into Cute Triangles
  • Bacon and Cheese Stuffed Crepes: Crispy All-Natural Bacon and Black Berry Maple & Roasted Jalapeno Cream Cheese Rolled up in the ‘Thin Pancakes’.

Desserts: Be Warned, I am not a Baker.  If You’re a True Connoisseur of Baked Goods and Sweets, I’m not Your Guy.  However, I Can Pull Off a Few Basics:

Private Affairs:

Personal Chef services are available upon request and are priced on a case-by-case basis.  The services we provide are extremely professional but also aesthetically casual- I Will Not Show Up in A Chef Coat.  And I will not cook dishes/offer services outside my skill level.  The above-mentioned entrees, appetizers and desserts listed are benchmark examples of the style of food offered, but this isn’t my first rodeo.  If you have Inquiries, please reach out.
